Prestashop by default has feature to define payment methods for selected carriers. You can find it under payment > preferences, feature is named "carrier restrictions" and it looks like below:
Unfortunately it does not work for virtual products. This feature allows to define carriers - payments association for real carriers. Virtual product delivery is not available here so in effect - payment methods will not work properly for virtual products' orders.
